This dish is loaded with vegetables, a salsa/salad kind of dish that is not only quick and easy to make but also delicious. Drizzle over some of our tangy lime and coriander vinaigrette and serve, I think this dish always tastes better after its been marinated in the vinaigrette for a little while so you could easily make this the night before if you prefer. if you have any Vinaigrette left over this can be kept in the fridge for up to a week.




Place the cucumber, black beans, corn, red pepper and cherry tomatoes, in a bowl and stir to combine.

Mix in the avocado, season with salt and pepper or drizzle with our tangy Vinaigrette

For the Vinaigrette combine all ingredients in blender or use a handheld blender to blend into a smooth sauce) {drizzle over your summer salad and serve immediately or leave to marinate in the vinaigrette overnight in the fridge.
