Gluten free lemon victoria sponge cake

Being on a gluten free diet doesn’t mean you have to miss out on having a treat now and again.  This gluten free lemon victoria sponge cake is light and fluffy and very tasty.

Preheat the oven to 190 C / Gas 5.

Cream the margarine and sugar until light and fluffy

Beat in the eggs and vanilla. Beat well

Mix in the flour and baking powder, until well combined with a smooth consistency

Add the milk and the Grated Lemon Zest

Pour the mixture into two lined sandwich tins

Bake for around 20 minutes or until skewer comes out cleanly

Turn out onto a wire rack to cool and then sandwich together with lemon curd

For the people not on a diet why not whip up some fresh cream and spread over the top of the cake
