Being on a slimming world diet doesn’t mean you cannot enjoy good food, the only difference between this slimming world¬†chicken jalfrezi¬†and one from your local Indian take away is this curry is syn free! it’s fresh home cooked healthy food and gluten free. this is also freezer friendly, you can batch cook it and freeze in individual portions. I think a curry always tastes better made in advance as the flavours develop better.

Serving suggestion

Serve this dish with boiled rice or half and half with slimming world chips

For an extra treat serve with a gluten free nan bread just remember to track your syns

Spray a large frying pan with low-calorie cooking spray and place over a medium heat

Fry the onion and garlic for 4-5 minutes, or until softened

Mix the turmeric and chilli powder together in a large bowl, add the chicken and stir untill covered

Add the chicken to the frying pan and lightly brown for 6-8 minutes

Transfer to a large saucepan

Stir in the peppers, tomatoes, passata and dried spices

Cover and simmer gently for 20-30 minutes, stirring occasionally

Serve with boiled rice
