As a Coeliac the thought of eating a pancake can make you feel ill, well not any more. These delicious Low carb gluten free cream cheese pancakes are not only light and fluffy and perfect for coeliacs they are also great for coeliacs who are following a low carb diet.

Here is what we recommend

Sweetener & lemon juice

lemon & poppy seed

Sugar free syrup & berries

Whipped cream & summer berries

Whipped cream and strawberries

Scrambled eggs & bacon

Scrambled eggs & avacado

 

Put all of the ingredients into a blender or magic bullet and blend until smooth

Let rest for 2 minutes

Heat a frying pan with butter or coconut oil

Pour ΒΌ of the batter mix into the pan

Cook for 2 minutes until golden

Flip and cook for 1 minute on the other side

Repeat with the rest of the batter mix
