Gluten Free chicken Kiev

There is nothing more satisfying than cutting into a freshly cooked gluten free chicken Kiev and seeing the yummy garlic butter oozing out all over the plate. Keeping the butter inside your Kiev can also be very tricky! Don’t worry if don’t manage to get the butter to stay inside the chicken Kiev on your first attempt.

The purpose of cooking these Kiev’s from scratch is creating a healthy gluten free alternative to the normal shop bought, full of gluten, frozen ones. on the plus side the more you make this dish the more you can practice your technique.

If you prefer a creamier garlic chicken Kiev, you could always substitute the butter in our recipe for cream cheese, we love them both ways but the creamier version is definitely a winner for us.

serving suggestion: these garlic Kiev’s go perfectly with boiled new potatoes, garden peas and broccoli, or you can serve them with a simple green salad, savoury vegetable rice or even mash potatoes and mushy peas.

Preheat the oven to Gas Mark 6, 200°C, fan 180°C.

In a bowl, mix together the butter, parsley, chives, garlic, lemon peel and seasoning

Roll into four sausage shapes and put them in the freezer

using a very sharp knife, slice the chicken breasts almost in half horizontally, you want to create a pocket

Open the chicken breast out, lay over some cling film using a rolling pin or a mallet flatten them out and set aside

Remove the cling film and place one of the frozen butter sausages in the middle fold over the chicken and secure with cocktail sticks

Carefully roll each of the chicken breasts, first in the seasoned flour, making sure it is well covered, then in to the beaten egg and then in the breadcrumbs. repeating with the egg and breadcrumbs for a second time

Place the chicken kievs on to a baking tray and oven cook for 40 minutes or until the chicken in cooked through
